Kale, collard greens, and Swiss chard are all rich in health-supporting antioxidants and disease-fighting flavanoids and they may even help the body keep cholesterol levels in check. In fact, these greens are considered to be some of the most nutrient rich foods in the world. They are extremely rich in the immune-supporting antioxidants vitamins A and C. Kale and collards are cancer-fighting vegetables, in the same cruciferous family as broccoli and cauliflower. And dark leafy greens are also a very good non-dairy source of calcium – great for babies and children who don’t tolerate cow’s milk.

your baby or toddler accept them, prepare them as a puree with a touch of fruit added to sweeten

Holiday Fun!
One of our favorite holiday activities is the cookie exchange. Here’s a delicious and healthy oatmeal cookie recipe created by
our Seattle
HAPPYMAMA, Amy Trenary. oatmeal cookie

OATMEAL COOKIES
(use all organic
ingredients)

  • 1/2 c butter, softened
  • 1/2 c shortening
  • 1 cup light brown sugar
  • 1 cup granulated sugar
  • 1 tsp baking powder
  • 1/4 tsp baking soda
  • 1 tsp ground cinnamon (optional)
  • 2 eggs
  • 1 Tsp Vanilla
  • 2 Cups All Purpose flour
  • 2-1/2 cups HAPPYBELLIES Organic Oatmeal Cereal with DHA & Probiotics

1. Preheat oven to 375F. In a large mixing bowl,
add butter and shortening, and beat with an electric mixer on medium to high speed for 30 seconds. Add sugars, baking powder, baking soda and cinnamon. Beat until combined, scraping side of bowl occasionally. Beat in eggs and vanilla until combined. Beat in as much flour as possible with mixer. Using a wooden spoon, stir in the remaining flour and oatmeal.

2. Form dough into small balls and place about 1.5” apart on cookie sheet (ungreased or use parchment paper). Bake 8-10 minutes or until edges are golden. Let stand on cookie sheet for 1 minute. Yield: about 30 cookies. Yum!
